The 4th day already! I went fo a colorful poké bowl this time. I realize that I’m halfway of my raw vegan challenge, three days to go. This raw challenge is also good for my electricity bill I guess since I don’t cook that much. This dish is a mix of raw and cooked ingredients though. Remember what I mentioned on day 1. I wasn’t planning to go completely raw with all dishes.

There has to be a fruit bowl with this raw vegan food challenge but this time it’s green and if you follow me on Instagram you know that my fruit bowls are never green. The body absorbs plant-based iron and vitamin C much better together and there are a lot of ingredients with vitamin C and iron mixed together in this bowl. I started a raw vegan food challenge. For one week I will post raw vegan dishes. They will not be completely raw since I’m not such a fan of raw food but I will throw plenty of raw ingredients in my dishes. For more information on my challenge check my Instagram account or IGTV.
- Vegan pho is really one of my favorite soups but like many other soups that I love, it’s originally not vegan. I got inspired by a recipe of Allerhande to make a quick pho and I veganized it. If you follow me on Instagram you van tell that many of my dishes are not only vegan but gluten-free as well. The reason for that, I’ll mention in another blog post.
What do you think of cheesecake? I really love it! In this photo, you can see that I couldn’t hold myself. I ate 25% of the cheesecake but I actually wanted to eat the whole cake…
I wanted to make a vegan strawberry cheesecake for so long and I finally made one.
It’s actually a pretty healthy one. It has no cane sugar, only raw ingredients and the good fatties! Lets get to it!

Making vegan cheese just started for me and I’m loving it!
I’m a cheese lover and I miss cheese a lot especially the sharper ones. The vegan versions of sharp cheeses are so difficult to get in a grocery store or natural shop so I’ll be definitely doing more recipes for vegan cheeses and this is #1. It was a success!
