Hi there, we’re going from quick vegan pho to quick vegan saoto soup. Saoto is traditionally a Surinamese pulled chicken soup with a boiled or baked egg that I veganized in a way that you can make it even after a 9 till 5 working day. Saoto soup is without hesitation my favorite soup so I eat it many times and with this quick way you can eat it many times too if you want to ;-).

- Vegan pho is really one of my favorite soups but like many other soups that I love, it’s originally not vegan. I got inspired by a recipe of Allerhande to make a quick pho and I veganized it. If you follow me on Instagram you van tell that many of my dishes are not only vegan but gluten-free as well. The reason for that, I’ll mention in another blog post.
The last vegan dish of January. I love soup and this is mung bean soup. Some people ask me what mung beans are. The mung bean is the green top of the bean sprout.
You can buy mung beans in many stores these days. I bought them at the Albert Heijn. If you love bean soup or beans in general you should definitely try mung beans as well and it’s that time of the year for a good tasty bean soup! Lees verder “Healthy Vegan Dish #5”

We eat so much during the holidays that probably isn’t that healthy so I want to share a healthy vegan recipe every Sunday or Monday this January and I’m starting with a vegan soup, inspired by the Surinamese saoto soup.
